Pick up all the sticks in your yard from winter. Build a fire. Set out a table with wine and apps. Add friends. Make dinner (recipe follows). Watch the sunset with an Irish coffee.
Clam Lake Filets
4 tenderloin steaks, rubbed with olive oil and sprinkled with your favorite spices (Chicago Seasoning, or garlic salt and ground pepper are good). 4 portebella mushrooms, washed and put in large plastic bag with balsamic or italian dressing for 45 minutes. Good Blue Cheese or Boursin if you like better. |
To cook:
Flatten out coals or heat a gas grill. With hand over coals count 123 ouch! Cook the mushrooms first till soft. Fill the center with lots of cheese. Move mushrooms over to melt and add meat. Cook steaks 3 minutes a side for medium rare. Plate steak with a mushroom on top. Serve with rice, salad and green beans. |
