Healthy Friday night Spring Supper.
Our Staple Greek Salad Cut up 2 cucumbers and put in a pretty bowl. Sprinkle with salt, pepper and oregano. Cut up 2 tomatoes, put in bowl and sprinkle again. Cut up a pepper and again sprinkle w/ S, P, and O. Drain some capers and put on top. Add some kalmatta olives and feta cheese. Drizzle olive oil, red wine vinegar and balsamic on Use 2 times the oil to vinegar. Let sit. Serve w/ bread to dunk in juices. Add arugula on the bottom you are a fan. I am! |
Add shrimp to the Greek Salad! YUM!
Take a pound or two of frozen shrimp. Run under cold water until thawed.
Take off the skin and tail. Rub with olive oil and sprinkle generously with cajun seasoning like, "Slap Ya Mama".
Let sit for 45-60 minutes.
Heat a grill to hot. Put shrimp in basket on grill and state till pink and done.
Toss in with the above salad.
You can also do peppers and onions in olive oil and seasonings and cook them before the shrimp in the basket.
